Allergies are excessive, pathological defense reactions of the immune system to certain actually harmless environmental substances (allergens).
The reactions to raw vegetables and fruits occur in combination with a simultaneous pollen allergy ("cross allergy").
Because the allergens (allergenic substances are mostly protein components) are very similar in structure to some substances, cross-reactions occur beyond the original allergy. The immune system does not react to the actual allergens, but to the structurally similar allergens. In the case of a cross allergy, the immune system confuses similar components of other substances with an existing allergy and reacts with defense.

Diagnosis:

Anamnesis, skin test, blood test & diet with provocation test

Allergy misconception: "A positive skin or blood test is sufficient to diagnose a food allergy."

Both skin and blood tests can only give an indication of a possible trigger and are not the only diagnostic parameters. They do not justify a long-term diet and can only be seen as a piece of the puzzle.

Cross allergies / food allergies often occur with pollen allergies:

Birch → almonds, carrots, nuts, soy

Grasses → potatoes, soy, kiwi, tomatoes, melon

Mugwort → peppers, celery, carrots, kiwi, tomatoes

Food allergies can also trigger cross-allergies:

Nuts → poppy seeds, kiwi, strawberries

Kiwi → pineapple, apple, carrots, potatoes

The 14 most common allergy triggers

The list applies to packaged foods across Europe, including the ingredient of a compound ingredient, including ingredients that are used as a technological adjuvant.

  1. Grains containing gluten, namely wheat, rye, barley, oats and products made from them

  2. Crustaceans and crustacean products

  3. Eggs and egg products

  4. Fish and fish products

  5. Peanuts and peanut products

  6. Soy and soy products

Why is nutritional therapy important?

Nutritional therapy helps you exclude allergens from your diet and put a wholesome diet into practice. An elimination diet under the supervision of a certified nutritionist helps you to find possible triggers and to avoid them consistently for a certain period of time. Pollen-associated food allergies (cross-allergies) are treated with a pollen-associated elimination diet. If there is still no improvement after four weeks with the strict diet, the connection between food and your complaints is very small.

In most cases, you do not have to go completely without certain foods. Heating of food and types of food of a certain group, as well as the amount of food play a role and can alleviate or cancel the reaction process.

It is always important to properly manage major allergies. Then other complaints such as asthma or cross-allergies cannot arise from it in the first place.

The aim is to supply all of the fatty acids, micronutrients (vitamins and minerals) that are important to you, energy and protein in the measure that your body is optimally supplied with. For this purpose, foods that promote inflammation are specifically avoided and plenty of anti-inflammatory foods are consumed. Weight reduction is recommended if you are overweight / obese. An anti-inflammatory diet can improve the state of health.

Underweight: <18.5

Nutritional therapy

  • Get enough fiber (> 30 g / day) through natural foods, possibly fiber substitution

  • Sufficient fluid: total fluid per day: 30 - 35 ml per kg body weight and day. Attention, this is not just a drinking liquid. The liquid from food (approx. 500 - 800 ml) must still be subtracted from this, so that an amount of approx. 1.3 - 2 l of drinking liquid is created.
